Chinese Style Baby Back Ribs
1 k. baby back ribs
1 med. red bell pepper, slice into strips
1 pc. lemon, sliced peelings into strips
10 stalks spring onions, sliced 2"-long
½ cup Shanghai soy sauce
1 tbsp. oyster sauce
2 tbsps. each lemon juice, Chinese rice wine, crushed garlic & sugar
1 tbsp. each chopped ginger & chili paste
4 cups rice, Sinangdomeng or C-4
8 pcs. Chinese mushroom, soaked & chopped
4 pcs. chicken cubes
4-½ cups water
To prepare the marinade:
Put all the ingredients in a pan with 1 cup water. Let boil covered then simmer for 1-½ hours. Slice ribs into single pieces. Place in a bowl and pour marinade; transfer into an oven bag and let stand for a while. Place ribs in an oven proof serving dish. Top with strips of red bell pepper, lemon peel and spring onions. Place in microwave oven set on high and cook for 30 minutes or till done.
To prepare rice:
Wash rice and soak for 1 hour before cooking then drain. Add mushrooms, chicken cubes and water. Cook for 25 minutes or till done.
Place a cup of rice on a plate. Top with 2 pieces of ribs and garnish with strips of bell pepper and spring onion. Serve hot.
