(Crabs in Coconut Milk)
2 tablespoons vegetable oil
3 cloves garlic, crushed
1 teaspoon ginger, minced
2 12-ounce cans coconut milk
1 pound pork spare ribs (cut into small pieces / boiled to tender / drain and set aside)
1 pound peeled pumpkin (sliced into cubes)
2 cups sitaw (string beans) cut into 3-inch length
6 whole blue or rock crabs, well cleaned or 1 pound crag legs
1 tablespoon bagoong - shrimp paste (Barrio Fiesta)
1/8 teaspoon ground white pepper
4 green onions, cut into 1-inch lengths
Heat the oil in a large pot and sauté the garlic and ginger.
Add the coconut milk, (Add the cubed pumpkin, pork pieces, and bagoong) bring it to a boil, reduce the heat and cook for 15-20 minutes or until the liquid is reduced by half, stirring occasionally.
Add the crabs, salt and pepper to the pot and mix well. Cover the pot and cook for 5 minutes. Add the sitaw / green onions and simmer for another 3 minutes or until the onions are just tender.
Serve with hot rice. Makes 3-4 servings.
