Pork Sinigang


Ingredients:
1 k. pork, sliced
2 onions, sliced
2 tomatoes, sliced
2 tbsps. patis
3 green pepper (siling panigang)

8 pcs. tamarind
8 cups. water
2 pcs. radish, pared & sliced
assorted vegetables (kangkong, string beans, gabi, okra etc.)

Directions:

Place 8 cups of water in a big saucepan.

Add the pork and cook for a few minutes.

Add the onions, tomatoes, green pepper, patis, tamarind and water.

Cover and let simmer until tamarind is cooked.

Remove the tamarind, mash with a little broth to extract juice; strain and return juice to simmering pork.

Add radish and vegetables, cook for a few more minutes.

Cover and remove from heat.

Adjust seasoning and serve hot.
